Chocolate Soy Hearts
Ingredients:

1 cup whole wheat pastry flour

½ cup soy flour

1 tbsp baking soda

1 cup sugar or light granulated cane juice

½ cup unsweetened cocoa powder

1 ½ cups Sammi's Best™ Soymilk

1 tbsp virgin olive oil

1 tsp vanilla

1 3-inch heart-shaped cookie cutter

frost with your favorite frosting
Preparation:

Preheat the oven to 350°F and grease two 8-inch square cake pans. Line a cookie sheet with parchment paper.
In a large bowl, combine the whole wheat pastry flour, soy flour, baking soda, sugar and cocoa. Mix well and set aside.
In a separate bowl, combine the Sammi's Best™ Soymilk, olive oil, and vanilla. Pour this mixture into the flour mixture, stirring with a wire whisk until well combined.
Pour the batter into the greased pans and bake for 25 minutes, or until the cake springs back when lightly touched. Cool completely.
Invert the cakes onto the cookie sheet. With the heart-shaped cookie cutter cut out 10 cakes, 5 from each pan. Frost. After frosting these hearts will keep wrapped in the refrigerator for 2 days.
