Baked Goods

Basic Roll Dough




1 package active dry yeast

 ¼ cup warm water

 1 cup Sammi's Best Soy or Whey & Rice

 ¼ cup sugar

 ¼ cup shortening

1 tsp salt

 3 ½ cups all whole wheat flour

 1 egg 


Preparation: Soften yeast in warm water (110 degrees). In separate bowl, combine Sammi's Best Whey & Rice or Soy, sugar, shortening and salt. Add 1 ½ cups of flour; beat well. Fold in yeast and egg. Gradually add remaining flour to form soft dough. Knead well. Place on greased surface. Cover and let rise until double, about 1 ½ to 2 hours. Turn dough out onto lightly floured surface and shape as desired into rolls. Bake on greased baking sheet or in greased muffin pans in hot oven (400 degrees) for 12 to 15 minutes. Makes about a dozen rolls.

Zucchini Tomato Custard Pie




1/3 cup grated Parmesan cheese

2 cups chopped zucchini

1 cup chopped tomato

1/2 cup chopped onion

1-1/2 cup Sammi’s Best Soy liquid

3/4 cup biscuit mix

3 eggs

1/2 tsp. salt

1/4 tsp. pepper


Preparation: Preheat oven to 375 degrees. Grease a 10-inch pie pan and press biscuit mix or use prepared uncooked refrigerator biscuits to cover the bottom of the pie pan. Sprinkle biscuit mix with parmesan cheese. Add zucchini, tomato and onion. Beat remaining ingredients until smooth. Pour over vegetables. Bake for 40-45 minutes or until a knife inserted comes out clean. Makes 6 servings


Cranberry Oat Bread




3/4 cup honey

1/3 cup vegetable oil

2 eggs

1/2 cup Sammi's Best Soy (liquid)

2 1/2 cups all-purpose flour

1 cup quick-cooking rolled oats

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1/2 tsp ground cinnamon

2 cups fresh or frozen cranberries

1 cup chopped nuts


Preparation: Combine honey, oil, eggs and milk in large bowl; mix well. Combine Flour, oats, baking soda, baking powder, salt and cinnamon in medium bowl; mix well. Stir into honey mixture. Fold in cranberries and nuts. Spoon into two greased and floured loaf pans. Bake in preheated 350-degree oven 40 to 45 minutes or until wooden toothpick inserted near center comes out clean. Cool in pans on wire racks 15 minutes. Remove from pans; cool completely on wire racks. Favorite recipe from National Honey Board


Baking Powder Biscuits



2 cups all purpose flour or whole wheat pastry flour

1 tbsp baking powder

1 tsp salt

¼ cup shortening

¾ cup reconstituted Sammi's Best Soy or Whey & Rice


Preparation: Mix flour, baking powder and salt. Cut in shortening. Mix in Sammi's Best with a fork. Knead dough just until it holds together. Roll out about 1 centimeter thick and cut out biscuits. Bake at 450 degrees for about 10-12 minutes or until golden. Makes 6 to 8 biscuits.
