Summer Dessert Pizza

 

Ingredients

 

 ¼ cup butter

 softened ½ cup sugar

 1 egg

 ¼ tsp vanilla extract

 ¼ tsp lemon extract

 1¼ cups all-purpose flour

 ¼ tsp baking powder

 ¼ tsp baking soda

 ¼ tsp salt

 4 oz. cream cheese

 softened ¼ cup confectioners' sugar

 1 cup whipped topping

 1 firm banana

 1 cup sliced fresh strawberries

 1 can (8 oz.) mandarin oranges

 2 Kiwifruits peeled and thinly sliced

 1/3 cup fresh blueberries

 Glaze: ¼ cup Sugar

 ¼ cup orange juice

 ¼ cup water

 2 tsp cornstarch

 

Preparation: In a mixing bowl, cream butter and sugar; beat in egg and extracts. Combine flour, baking powder, baking soda and salt; add to creamed mixture. Beat well. Cover and chill for 30 minutes. Press dough into a greased 12-in. or 14 in pizza pan. Bake at 350° for 12-14 minutes or until light golden brown. Cool completely. In a mixing bowl, beat cream cheese and confectioners' sugar until smooth. Add whipped topping; mix well. Spread over crust. Arrange fruit on top. Combine glaze ingredients in a saucepan; bring to a boil, stirring constantly. Boil for 2 minutes or until thickened. Cool to room temperature, about 30 minutes. Brush over fruit. Store in the refrigerator.Yield: 12-16 servings

 

Chocolate Pudding

 

Ingredients

 

1/3 cup Sammi's Best Dutch Chocolate dry

1 tbsp cornstarch

1 cup water

1 tablespoon butter (optional)

 

Preparation: Mix all ingredients in saucepan. Place over moderate heat and cook until thick, or microwave about 4 minutes. Makes 2 servings. To make 4 servings, double all ingredients, but use 3 tablespoons cornstarch.Variations: Use Sammi's Best™ Soy or Whey & Rice, add 1 tsp vanilla for a vanilla pudding, or peanut butter or coconut.

 

Rice Pudding

 

Ingredients

 

2 tbsp butter

½ cup round-grain pudding rice

4 tbsp brown sugar

5 cups Sammi's Best Soymilk

fresh grated nutmeg

 

Preparation: Set the oven to 325°F. Use the butter or margarine to grease a shallow ovenproof dish. Rinse the rice thoroughly under cold running water, then put it into the dish with the sugar and Sammi's Best™ Soymilk; stir gently. Grate some nutmeg on top, then place in the center of the oven and bake for about 2 hours, or until thick and creamy. Serves 4

 

Chocolate Soy Hearts

 

Ingredients

 

1 cup whole wheat pastry flour

½ cup soy flour

1 tbsp baking soda

1 cup sugar or light granulated cane juice

½ cup unsweetened cocoa powder

1 ½ cups Sammi's Best Soymilk

1 tbsp virgin olive oil

1 tsp vanilla

1 3-inch heart-shaped cookie cutterfrost with your favorite frosting

 

Preparation: Preheat the oven to 350°F and grease two 8-inch square cake pans. Line a cookie sheet with parchment paper. In a large bowl, combine the whole wheat pastry flour, soy flour, baking soda, sugar and cocoa. Mix well and set aside. In a separate bowl, combine the Sammi's Best™ Soymilk, olive oil, and vanilla. Pour this mixture into the flour mixture, stirring with a wire whisk until well combined. Pour the batter into the greased pans and bake for 25 minutes, or until the cake springs back when lightly touched. Cool completely. Invert the cakes onto the cookie sheet. With the heart-shaped cookie cutter cut out 10 cakes, 5 from each pan. Frost. After frosting these hearts will keep wrapped in the refrigerator for 2 days.

 

Apple Cranberry Crumble

 

Ingredients

 

Filling 2 ½ lbs Granny Smith apples peeled, cored and cut into ½ inch slices

½ cup dried cranberries

½ cup unrefined organic cane juice (bought in bulk from BestLife)

¼ tsp freshly grated nutmeg

1 cup Sammi's Best Soy

 Reconstituted Topping

¾ cup regular rolled oats (not quick or instant)

2/3 cup all purpose flour

¼ cup soy flour

¾ cup unrefined organic cane juice (bought in bulk from BestL)

1 tsp ground cinnamon

½ cup cold unsalted butter, cut in bits, or Smart Balance

 

 

Preparation:Preheat the oven to 375 degrees. Grease an 8-cup, deep baking dish Prepare the filling: In a large bowl, combine the apples, cranberries, sugar, and nutmeg. With your hands, toss until the apples are well coated with the sugar and spice. Turn the fruit into the prepared baking dish and arrange in an even layer. Pour the Sammi's Best™ Soy over the fruit. Prepare the topping: In a large bowl, combine the oats and both flours. Mix in the sugar and cinnamon. Using a fork, blend in the shortening until the mixture is well blended. With your fingers, pat the topping over the fruit to form a crust. Bake the crumble until the topping turns golden and the apples are tender when a knife is inserted, about 40 minutes. Let the crumble sit 15-20 minutes before serving. You can use pears in place of the sliced apples.

 

Spice Cake

 

Ingredients

 

1 cup Sammi's Best Organic Cane Sugar

1 whole egg

1 egg yolk

2 cups of Sammi's Best Whey (preferred for cooking) or Soymilk

1 1/3 cup flour

1/ 2 tsp baking soda

1/2 tsp salt

1/2 tsp baking powder

1 Tblsp ground cinnamon

1/4 tsp ground cloves

1 tsp ground ginger

2 tsp ground cardamon icing

 

Preperation:1 egg white1 cup brown sugarChopped nutsPreparation:Cream the butter and the organic sugar. Add the egg and the egg yolk. Beat to incorporate. Sift together the dry ingredients. Add alternately the whey or soymilk and the sifted dry ingredients. Beat between each addition. Make the dry ingredients the final addition.Grease and flour an 8 x 8 two quart baking pan. The icing goes on the cake before it is baked. To make the icing beat the egg white until stiff. Fold in the brown sugar. Spread the icing over the batter in the baking pan and sprinkle the top with chopped nuts. Bake in a pre-heated 350 degree oven for 45 minutes or until a toothpick inserted in the middle comes out clean.
